Weekly recipe roundup number 8 has appeared! It was a busy week for me last week, I was up in London for medical reasons and spent a few days with my brother.
Traditional Victoria sponge
I have made a few of these before and I am very happy how it turned out. I haven’t changed the recipe much, I just improved my technique a bit. My piping can be worked on more obviously, however I feel that the cake overall doesn’t need improving. I will make it with buttercream at somepoint, but the extra sweetness is a bit much in my opinion.
Apricot, celery and walnut stuffing
I recently found out that this is from the Cordon Bleu Cookery Course, magazine #40 in 1970. Both my mother and grandmother have these and have been using it for many years. For this batch I didn’t have the required parsley to hand so froze it before I reached that point. When I dethaw it, I will add the parsley to the mixture.
Frangipane mince pies
I love mince pies and I love frangipane, it seems like an ideal combination to me! I made a different type of mince pie before, and I thought that this would be a good time to try another type! My first attempt at the recipe produced far too much frangipane. I don’t know if it was an error on my part, however I halved the required ingredients. I also reduced the amount of orange zest required as I felt it was (personally) too much!
This week is going to be very busy for me. I will be making marzipan, chocolate Yule log, pork pie and a Christmas pie! I will be posting the majority of the recipes this week although the pork pie might have to wait until the following week. This year I will hopefully crack making a clear gelatine for the pork pie!
