Weekly recipe roundup 24
The weekly recipe roundup 24 has rolled around, which means two things: the end of one week and the end of my first six months! I am very happy with how things are progressing so far. I am slowly working my way through my original recipes and retaking the pictures. Along with this, I am slowly generating a list of bakes that I am going to start selling over on my website JollyGoodBaker. Currently I am wading through different options for WooCommerce themes and still trying to locate a logo designer.
At home, we have been having this since we were kids. It is ideal for children as it barely need chewing and is pretty sweet. This is a self-saucing pudding where the lighter flour part rises to the top during baking, while the sauce sinks to the bottom. It can come in a variety of flavours, such as chocolate, banana and caramel, butterscotch and almost anything else! You will find the recipe for it, over here. If the egg whites aren’t folded in 100% and there are lumps on the surface, you can use a balloon whisk to gently blend the surface smooth again.
This was actually going to be a creme brulee tart, however there was a bit of a crack in the pastry and I didn’t want to risk spillage. Raspberry jam and some frangipane seemed like a lot less of a risky proposition. I made it in a ten inch tart case which I am starting to think is rather large! From now on I will only make eight inch tarts, unless there is an event going on that requires a larger size. The tart itself turned out well, with a lovely amount of jam covered in frangipane. Quite often you will find a bare minimum of jam which I find to be very disappointing.
I had been planning on a creme brulee tart but I decided a Bakewell tart would be better! Lemon meringue pie
I haven’t made one of these before, so it was bit of a learning experience. I have made lemon curd before, but the filling isn’t quite the same. Virtually all versions require corn flour, although I have seen a few knocking around which use a bit more plain flour instead. I would like to try it again although maybe using an Italian meringue to see the difference it makes. There were two issues with this tart, one being directly related to the meringue pie. The meringue itself turned out very well, with no weeping. However, there was a liquid released when cutting into it which I suspect was due to not cooking the lemon long enough. I will make this recipe again and cook it for a bit longer next time. The second issue is really down to myself and not rolling out the pastry quite thin enough. Obviously this comes down to practice and is something that I will overcome.
Mum popped over to do some pointing and helped make this lovely lemon meringue pie. I decided to boost the lemon content as frankly it never seems enough!
