The weekly recipe roundup 23 has arrived! I have baked a few things this week – I had been planning on making a lemon meringue pie but that got put back by a week. I will be baking that this week coming.
As I previously said, I had been planning on making a lemon meringue pie. This requires some lemon curd and you will find the recipe for it here. It is very easy to make and whilst you can make it with golden sugar, I suggest using white for a yellower curd.
I decided to remake these brownies and retake the picture for it. I lowered the amount of sugar used in the recipe as it seemed far too much and the result is better in my opinion. My original recipe was slightly too floury as well, so I have reduced that and increased the chocolate. I believe we are now at an optimal ratio of ingredients
Vanilla ice cream
I had a crack at making some vanilla ice cream! Now, I don’t have an ice cream machine as I don’t eat much of it, so I used a no-churn method. I stumbled onto a recipe with using just double cream, condensed milk and vanilla which seemed like an idea. The recipe for it is right here. To be honest, it barely needs instructions and only required two basic ingredients, with a third being the vanilla essence! It is incredibly rich and creamy and so easy to make with zero ice crystals.
I haven’t made a pizza in a while, so making another seemed like a good idea. I topped this again with caramelised onions, goats cheese, grilled tomatoes, black olives and basil. Next time, I would consider replacing the olives with something like capers. Here is the result – I was pretty pleased with the result, although as I mentioned I don’t think that the olives did much for it, at least in my opinion.
This blog post was talking about upgrading the quality of my images in general. This includes the older images that I used as a final shot of what I had cooked. The images are definitely improving; I just need to start working on varying the backgrounds now!
