Weekly recipe roundup 17
That time has come around again, for it is time for the weekly recipe roundup 17! I only managed to get one recipe up this week, and I imagine the same will occur next week! I did actually do a fair amount of baking this week, but didn’t have the time to bake for more than one specific recipe. Taking all of the pictures, bringing them into Lightroom and then on to Photoshop for a bit of postprocessing, as well as writing the recipe all takes time! I spent all day Friday helping my mum set up her stand at the LPOC show at Olympia.
I made these at the beginning of the week as I had promised to make more! This was a chance to use up the delicious blueberries and raspberries that I hadn’t quite finished. I split the ingredients used in half from this recipe that I had made for the previous week.
Chewy cinnamon and raisin oat cookies
I had made these before, but hadn’t gotten around to getting any pictures for a recipe. However, this has now been remedied! I posted the recipe here for the delicious cookies! Baking time will change the chewiness level – as I bake them more, I will figure out the exact time to remove them. I believe that these could have been slightly chewier if removed a minute earlier from the oven. The end result was still very delicious!
Banana and chocolate cupcakes
I have never made cupcakes before and as a result didn’t have any recipes laying around! The recipe I eventually followed produced a very liquid batter which did not seem at all correct, it certainly wasn’t as thick as I was expecting. Obviously this is something I will need to spend more time practicing, which is never a bad thing. Along with this, I need to invest in an ice-cream scoop for accurate measurements and more large piping nozzles!
Cranberry, orange and walnut cookies
I made these after baking the cupcakes and I went a bit crazy with the cranberry usage. What I should have done, was increase the base amount of cookie dough to cope with the amount of fruit I used. The result certainly tasted great, however they definitely needed some more bite. I will remake this and change the quantities so that I can get the recipe posted!
