    Zesty lemon curd

    This zesty lemon curd is great on hot toast, but you can also into mousses, or used as a filling in other desserts. It is very easy to make, and once you have made it you won’t want to buy it again!

    Curd tends to be made with citrus fruits, although you can make it from things like mangoes and berries.

    Wash some jam jars with hot soapy water and then rinse clean.
    Put the jars into the oven to sterilise at 120 C until they are dry.

    Take the zest from 3 of the lemons and mix into the sugar.
    Extract the juice from all of the lemons - it should probably be around 200 ml or slightly over.
    Separate one of the eggs, you only need the yolk so use the white in another recipe!

    Put the sugar and zest, butter and lemon juice into a bowl sitting over some simmering water.
    Stir slowly until the butter has melted.
    Mix the three eggs and egg yolk together with a fork.

    Add the mixed eggs into the butter, sugar and lemon mixture.
    Stir slowly until it starts to thicken up, which should take up to around 10 minutes.

    Remove the bowl from the heat and continue to stir for around 5 minutes as it cools.
    Pour the curd into the jars and cover with a wax disk and put somewhere cool and dark.
    After opening put into the fridge - they should last up to two weeks.
