Ingredients

Adjust Servings:
800 g Minced lamb
2 kg Potato
2 Onion diced
3 Carrots diced
1 can Chopped tomatoes
2 cloves Garlic
4 tblspn Olive oil
600 ml Stock Lamb
Salt to taste
Pepper to taste

    Traditional homemade shepherds pie

    Lamb mince is the basis of the traditional homemade shepherds pie.  It started in the mid 18th Century as a ‘cottage pie’, which is beef mince based. Fish pie is similar, although it uses various fish and in a parsley sauce rather than  gravy.  I will link those two into this page once I get around to writing them up.

    Now onto a slightly controversial point. Although these three have the ‘pie’ moniker,  they aren’t ‘proper’ pies. Pastry should wholly encase the filling according to the British Pie Awards.  A tart should have a base or base and sides made of pastry. In my mind, these fall into the ‘casserole with a lid’ category.

    Steps

    Dice the onions and dice the carrots.
    Heat the oil in a frying pan and add the diced onions.
    After about 5 minutes add the crushed garlic and carrots.

    After the carrots have softened, added the tin of chopped tomatoes and stir thoroughly.

    Heat a bit of oil in a saucepan and add the minced lamb.
    A|s it browns, break it apart until browned all over.
    Drain the fat and add the tomato puree and stir thoroughly.

    40 minutes

    Add the mince and puree to the diced vegetables.
    Add the lamb stock and simmer for around 40 minutes until the liquid had reduced by at least half.
    About half way through move onto the next step.

    20 minutes

    Peel and chop the potatoes.
    Put into a pan of boiling water and simmer until soft.
    Preheat the oven.

    Pour the mince into a suitably sized pie or casserole dish.
    Now drain the potatoes and add the butter and start to mash.
    Once you have removed the lumps and it's smooth, add the milk and salt and pepper to taste.
    Mix thoroughly.

    Add the mash to the mince and run a fork over the top.
    Grate cheese over the top of the mash.

    30 minutes

    Put the dish onto a baking tray in the middle of the oven and bake until golden brown on top.
