10 g Yeast
10 g Salt
350 ml Water tepid
2 tblspns + extra Olive oil
16 Tomato cherry
250 g Mozzarella
1 tsp Marjoram

    Tomato mozzarella focaccia

    This tomato mozzarella focaccia is pretty easy to bake althought it not quite so easy to handle.  The dough itself is a very wet one which makes handling harder.  It can be served on it’s own, as a side, or even as a base for pizza or as a sandwich!  I have made focaccia before, just changing the toppings.

    Sift the flour into a bowl and put the salt into one side of it and the yeast into the other..
    Make a well in the centre of the flour and add about three quarters of the tepid water into the well.
    Slowly start to mix everything together, adding the any more water as required.

    Continue to mix together for about seven or eight minutes until somewhat smooth.
    Now add the two tablespoons of olive oil before spending another couple of minutes mixing together until combined.

    Put the dough into a lightly oiled bowl and cover with cling film and leave until double in size.
    Meanwhile, chop the cherry tomatoes in half and shred the mozzarella.
    Flour your work surface quite heavily and empty the dough onto it.

    You will want to keep as much air in as possible, so don't knock back like a normal dough!
    Divide the dough into two and roughly form them into two rectangles before transferring to a couple of baking trays covered in greaseproof paper.
    Gently stretch the dough out to form larger rectangles.

    Place half of the tomatoes into the dough with the cheese in between the gaps.
    Lightly sprinkle with olive oil then marjoram.
    Pre-heat the oven and leave the dough to rise for about 15 - 20 minutes.

    Place onto the middle rack of the oven and bake for between 15 - 20 minutes.
    Remove when golden and enjoy whilst warm!
