150 g Golden icing sugar
300 g Ground almonds
2 Egg medium
1 Orange zest, juice, small
1 Lemon juice - if using instead of orange

Homemade almond paste

This homemade almond paste actually tastes of almonds, compared to store bought marzipan. It is consists of around 50% almonds whereas marzipan is about 25% almonds. This is more bitter than the very sweet marzipan, yet it works very well as a foil to the royal icing.  It has a slightly grainier texture compared to marzipan and needs a bit more work to apply to a cake. However, it is worth making by hand!

It is a filling in many pastries and desserts around the world, from China to Turkey to the US. I will make marzipan later, so keep an eye out, and I will make sure to link it here.  This will be covering my Christmas cake that I make.

Sift both of the sugars into a bowl and mix in the ground almonds.

Grate in the zest of half of an orange and mix in thoroughly.
Make a well in the centre.

Beat the two eggs together.
Mix in 2 -3 teaspoons of the orange juice, or if you prefer, lemon juice to the eggs.
Pour into the well and stir with a spoon until it starts to come together.

Tip the dough onto a work surface dusted with icing sugar and knead with the palms of your hands until silky smooth.
