4 Egg medium
60 g Plain flour
60 g Cocoa
1 tsp Vanilla
1/2 tsp Salt
1/2 tsp Baking powder
50 g Walnuts
250 g Plain cooking chocolate

    Easy rich chocolate brownies

    These easy rich chocolate brownies are very easy to make giving delicious results. You can make them pretty quickly, which is good as they go rather quickly too!  They are normally eaten warm and with ice cream or creme fraiche, or on their own.  Sometimes you will find them coated in frosting as well, when there isn’t enough chocolate!  This is different from the recipe I would use, but a change is always good.  Depending on the quantities of ingredients, they are either fudgy or more cake-like. More chocolate and butter will give us a fudgy version, more flour will end up with a cake-like version.  Finally, there is a similar thing called a blondie which is almost the same, except that brown sugar is used instead of cocoa!

    Brownies are originally from the United States, at least in this format.  They started to appear at end of the 19th and beginning of the 20th century under this moniker.

    In a large bowl pour in the sugar and add the diced, room temperature butter and cream the two together.
    Melt 200 g of the chocolate in a double boiler or microwave and leave to cool.
    Preheat the oven.

    Add the cocoa and thoroughly mix in until even, followed by the vanilla.
    Mix the eggs in a small bowl before adding to the butter and sugar.
    Mix until combined.

    Sift in the flour, salt and baking powder and fold in.
    Now pour in the melted but slightly cooled chocolate and fold in.
    Chop the walnuts and remaining chocolate.

    Add the chocolate and walnuts and fold until evenly distributed.
    Grease and line a 9 x 9 inch cake tin and evenly pour the batter into it.
    Smooth with a spatula.

    20 - 25 minutes

    Bake in the middle of the oven for 20 - 25 minutes.
    If you only have a small cake tin, the batter will be thicker the baking times will need to be increased somewhat to take account of this!
    Remove from the oven when a skewer is inserted into the centre it comes out clean.
