    Delicious chewy flapjacks

    The recipe for delicious chewy flapjacks is so easy! Obviously, these are British flapjacks, completely different to what they are in the USA. During all of my time I had lived in the US, I had never heard pancakes called flapjacks.

    Anyway, they key ingredient to this is Golden Syrup – do not replace it with pancake syrup, corn syrup or molasses. I would suggest honey, maple syrup or a date puree and apple juice combination. I haven’t made it with those, yet, so I can’t say the replacement amount should be exactly the same! You can add a small amount of dried fruit along with the oats, like sultanas, raisins or cranberries. You can add spices if feeling adventurous, although we may start to verge into Parkin territory at this point! To sum up, It is very easy to make changes to this very basic recipe, although I enjoy it in this form!

    Pre-heat the oven.
    Chop the butter and melt in a thick bottomed pan over a low heat.
    Grease and line a baking tray with baking paper, roughly 22 cm by 22 cm (9" by 9").

    Mix the sugar and oats in a large bowl.
    Pour the melted butter into the oats and sugar, along with the 4 tablespoons of Golden Syrup.
    Mix until combined and then pour into the prepared baking tray and flatten with a palette knife.

    Bake in the middle of the oven for about 15 to 20 minutes and starting to turn golden brown.
    Remove from the oven and leave to cool in the tray.
    When cooled, remove from the tray and cut into cubes.
