10 g Salt
10 g Yeast
30 g Butter unsalted
300 ml Water room temperature
150 g Apricots dried
150 g Walnuts

    Delicious apricot walnut bread

    This delicious apricot walnut bread is similar to the stilton and cranberry bread that I made a few weeks ago. It is more involved than a basic loaf but well worth the extra effort to make once in a while! I hadn’t planned on this combination but stumbled over this site and had the combination so decided to bake it! I will be using that site quite a bit more to see what I can come up with. The important thing to remember is to use dried fruit. Using fresh fruit will increase the moisture level in the dough and cause issues when baking.

    Sift the flour into a large bowl.
    Add the salt to one side of the bowl and the yeast to the other side.
    Mix thoroughly then add the butter.

    Coat the butter with the flour and make a well in the centre.
    Add the about 3/4 of the water and start to bring it all together with your fingers.
    Add more of the water as required. You might not need to use all of it, or you might need a little more.

    Once it has come together, turn out onto a lightly floured surface.
    Knead together for up to around 10 minutes until it starts to become silky and smooth.
    Form into a ball and put into a lightly oiled bowl and cover with clingfilm and leave for at least an hour, or until doubled in size.

    Chop the walnuts into smaller pieces and dice the dried apricots.
    Knock the air out of the dough and fold the walnuts into the dough.

    Turn the dough onto a floured surface and roll out to around 30 cm by 20 cm.
    Spread the apricot pieces out evenly over the surface,

    Roll dough up like a Swiss roll with the seam at the top and then form that into a spiral.
    Put onto a baking tray and put into a bag and leave to prove again for another 45 minutes.
    Pre-heat the oven with a baking tray placed at the bottom of the oven.

    When the dough springs back after gently pressing with a finger it is ready.
    Place into the middle of the pre-heated oven and put a jug full of cold water into the hot baking tray.

    Bake for around 30 minutes.
    It is ready when you tap on the base and it sounds hollow.
    Leave to cool on a wire rack.
