    Creme patissiere

    This Creme patissiere is a thick filling custard for cakes, tarts and assorted pastries. It also known as ‘creme pat’ or pastry cream. Vanilla is the most standard variation of this, however you can add various flavourings – if using powders you will want to reduce the flour slightly. Also, you can fold in things like butter, whipped cream or cream cheese to change the overall texture and taste. As such a basic constituent part of so many different pastries, it is well worth mastering. It is very easy to make – the only thing to remember is to keep whisking at all times to prevent the eggs from curdling! You can store this in the fridge for up to three days without having to worry.

    Put the egg yolks into a mixing bowl and add a third of the sugar to them.
    Mix until they reach a pale yellow colour and then mix in the flour.
    Into a pan, add the milk, the split vanilla pod and the remaining sugar.

    Turn on the heat and stir the milk until bubbles start to appear.
    At this point, turn the heat off and remove the vanilla pod.
    Pour a third of the milk into the egg mixture and stir until thoroughly combined.

    Pour this back into the remaining hot milk while whisking and bring back to the boil.
    Keep stirring while it starts to boil, it will start to thicken.
    When the spoon leaves a trail so you can see the base of the pan, it should be ready.
    This will take at least a minute.

    Pour into a bowl and either lay cling film diretly over surface or cover with icing sugar to prevent a skin from forming.
    Leave to cool and then refrigerate until required.
