200 g Plain flour
35 g Ground almonds
65 g Caster sugar
150 g Butter
1/2 Orange zest only
1 Egg medium
Mincemeat
50 g Caster sugar
50 g Butter
20 g Plain flour
30 g Ground almonds
1 Egg
20 g Almonds sliced

    Christmas frangipane mince pies

    These Christmas frangipane mince pies are perfect for the Winter evenings. These have a base of orange and almond sweet pastry and topped with a lovely almond frangipane. These aren’t quite as heavy as a fully enclosed pastry mince pie, which obviously means you can eat more! Mince pies are a delicious festive treat that I try and extend for as long as possible! You don’t ned to have these with brandy butter, something like cream should be more than enough. You can just go with normal sweet pastry instead of the one I used or possibly even just shortcrust.

    Make the pastry as per the instructions here - first thoroughly mix the dry ingredients before rubbing through the butter.
    Then add the zest and mix thoroughly again before adding egg.
    Roll into a ball and squash slightly before putting wrapping in greaseproof paper and putting into the refrigerator for at least one hour.

    Thoroughly grease a 12 hole mince pie tin.
    Remove the pastry from the fridge and roll to a thickness of about 3 mm.
    Using a pastry cutter of suitable size, cut 12 circles. You may need to reroll any left over pastry!

    Using your fingers, gently massage the pastry circles into the tin.
    Using a fork, prick some holes in the base and make sure any air pockets are removed.
    Put the tin into the fridge for 30 minutes.

    Turn on the oven to preheat.
    Cream the butter and sugar together until light and then sift in the flour.
    Thoroughly the flour into the creamed butter.

    Whisk the egg together and then add to the butter and flour.
    Mix thoroughly together until it is thoroughly combined.

    Add the ground almonds and mix thoroughly into the batter.

    Remove the tin from the fridge.
    Spoon in between 1 1/2 and 2 teaspoons of mincemeat into each pastry case.

    Using a piping bag, or a spoon if you don't have that, add frangipan onto the mincemeat.
    Decorate with the sliced almonds if you wish.

    20 minutes

    Put into the preheated oven and bake for around 20 minutes, and golden brown.
    Remove from the oven and let sit for five minutes before remove to cool on a wire rack.

    Sift some icing sugar onto decorate and enjoy!
