Basic sourdough starter

The basic sourdough starter probably doesn’t need a recipe as such – the only ingredients are flour and water. The only other thing you will need for this is time and patience! There is a chance this will not work for you the first time around, but flour is pretty cheap, so no great loss. I like to use the 700ml Lock & Lock sealable container to house my starters, but any large jar with a removable lid should be sufficient. This will probably take between 7 to 9 days for it to get strong enough to use to make sourdough; if you aren’t getting a decent rise in bubbles then you may need to start over. By consistently feeding it the same amount at the same time, you should be able to tell how it is doing and roughly how much it should be rising.

Pour the flour into a bowl and make a well.
Make sure the water is room temperature and thoroughly mix with the flour into a smooth paste.
Cover with clean cloth over the bowl and leave in for about 24 hours in a warm room.

Measure 100 g of flour and 100 ml of water and mix together thoroughly.
Into this, pour 50 g of the original starter - you will have to discard the remainder.
Leave covered for another 24 hours.

Repeat the previous step but pour the mixture into the jar, leaving the lid loose and NOT screwing it on.
You will probably have to repeat this for six or seven days.

On the morning that you wish to use the starter, feed it enough flour and water so that you have starter left over, after you have removed the required amount.
I usually use the starter once it has doubled in volume and before it starts to collapse on itself - usually around 8 - 10 hours.
I then re-feed the leftovers and pop it back into the fridge.
