I was hoping to post the lemon and gin bundt cake today, however, I think the recipe requires refinement first. I will make the cake again with a few alterations so that I know it works 100%. It certainly tasted good as it was, although I think increasing the gin quantity might help. The texture didn’t seem quite right, unfortunately. One can’t expect recipes to work the first time and practice makes perfect! This was also the first time using a silicone mould as well! Unfortunately, I will have to wait a week or more before I can remake that cake, due to prior plans.
